Editing any pages that make heavy use of CSS really slows down Dreamweaver for me. It is incredibly frustrating that such a simple thing as editing an HTML document can bring four xeon processors to a crawl.
Is there some sort of trick I'm missing to get it to perform well? How do people put up with this?

You are using a universal binary version of Dreamweaver right? I don't know a lot about Dreamweaver, so that is the only thing that I can think of.

Yes it's UB. Dreamweaver has the strange tendency to just randomly go extremely slow, even if I'm just using it as an HTML editor.

Check the Activity Monitor whenever it suddenly goes slow.
My guess would be that spotlight is trying to index some new pages you're creating, but that shouldn't take terribly long.

I'm not sure how well Creative suite handles quad core processors. Although I'm running a G5, CS2 and CS3 would tend to slow to a crawl from time to time. Do you currently have version cue enabled? I find CS, and my entire system overall, speeds up quite a bit once I turn version cue off.
