You can't; it's not an app you downloaded, it's part of the operating system.
You might be able to if you jailbreak, I'm not sure since I'm not jailbroken and typically don't recommend it.

Yea if you jailbreak it you break your warranty with apple and they say it makes it better but doesn't I know someone who jailbreak there iPod and is constantly not workin

Jailbreak it. Get iFunBox for your computer. plug in your ipod to the computer. Open the program and go to the Application(System) section on the left hand side. Find game center. Right click and click delete restart your ipod touch and volla game center is gone
