Ain't gonna happen.
However, if you can imagine the "cards" as presentation slides, then Keynote is very close to what you are looking for. Judicious use of linking and macros could make a Keynote presentation behave very much like a HyperCard stack.
There is of course the option of using a text editor to hand code the application in HTML and ECMAScript, but that costs a lot more time and is a lot less elegant than Hypercard and HyperTalk.
For the truly masochistic, there is some loose talk of porting LibreOffice to iOS. However, the only advantage I see to that would be the ability to tie-in to a database with the "Base" application, and without Java support that's a non-starter :-/
